Welcome to Hatzidakis winery a true gem of the Island and a living tribute to the spirit of Santorini itself. Founded in 1997 by Haridimos and Konstantina Hatzidakis. The winery began with a simple and powerful idea: To breathe life back to the abundant vineyards of Pyrgos Kallistis village in Santorini and reclaim the ancient soul of Santorini’s wines. Against the odds , against the rocky-volcanic soil, the harsh winds and the harsh sun , Hatzidakis nurtured the vines with patience and care, believing in the magic that this land holds.

Hatzidakis winery is situated in a traditional “canava”, meaning a cave curved into the volcanic rock beneath their family vineyard. The decision to build the winery underground was driven by a commitment to sustainability and respect for the land.
This subterranean cellar, originally used by Konstantina Chryssou’s grandfather to store farming tools and shelter livestock, was transformed by Haridimos Hatzidakis into a winery in 1997 .
The natural insulation provided by the cave maintains a stable temperature year-round eliminating the need for artificial climate control and ensuring optimal conditions for wine production and aging.

Hatzidakis winery is considered a fully-vegan winery as no animal derived products are used! Their commitment to sustainability and ethical practices extends to every aspect of production, from vineyard management to the final bottling, making their wines suitable for vegan consumers.

One of the purest expressions of this magic is Aidani, a native delicate grape that thrives under Santorini’s bright skies. Hatzidakis crafts Aidani into a wine that captures the essence of the Island. My personal favourite wine of Santorini – floral, fresh, with a gentle embrace of citrus and white flowers. Tasting it is like feeling the first soft breeze of summer on your skin — a quiet, unforgettable moment.

The Aidani wine label from Hatzidakis winery carries a special personal touch as it features a drawing by Stella Hatzidaki, the older daughter of the family, when she was very young , representing the artistry and family heritage of the winery.
